A few weeks ago, I challenged two of my friends to “Veggies All Day” and we found it the hardest to get vegetables into our breakfast. I made it a goal to find as many ways as I could to sneak them into my first meal of the day, but you know me – nothing weird!
Dippy eggs with sweet potatoes + cinnamon
Veggie Egg Scramble – This one has onions, peppers, and tomatoes.
Egg Muffin Cups – Similar to the egg scramble, but made with meal prep and baked in muffin tins.
Green Smoothie – Mine includes spinach as the vegetable.
Veggie Omelet + Salsa
Celery + PB (as an add-on, this wasn’t my entire breakfast)
